Appetizers


Holiday Cheese Ball

8 oz  Mexican Velveeta (Hot or Mild)

2 oz boxes of cream cheese

1 pkg Hidden Valley Ranch Dressing

At room Temperature mix all ingredients together.  Roll in chili powder and serve with chips or crackers





Breads


DUMPLINGS

1 c. ice water          1 t. crisco

1 t. baking powder   1/2 t. salt

Flour (enough to make a soft dough)

Mix all ingredients togethre.  Have broth boiling and drop by teaspoon fulls into the broth.  When they rise to the top they are done.

 

Homemade Noodles

3 or 4 eggs (beaten well)    salt to taste

2 pinches of baking powder 

Mix well.  Add flour until it makes a stiff dough.  Roll out and cut into strips.

**Note*  If your not in a hurry and have room leave noodles out several hours or even overnight.  You can freeze noodles that you don't use and to make a good sized batvh triple the recipe.

Punch Bowl Delight

1 box yellow cake mix     2 boxes vanilla pudding

1 can drained crushed pinapple     2 cans strawberry pie filling

4 bananas sliced     2 tubs cool whip

Bake cake and fix pudding just like the box says.  Let cake cool and cut into 1 inch squares.  Layer each ingredient in a "punch bowl"starting with cake squares and ending with cool whip.  Continue to layer until all ingredients are gone.  You can't go wrong with this recipe and it is perfect for luncheons and holidays :)





Main Dish


Texas Enchiladas

One large pot of chili                                     

2 cups Hot water

At least 12 large flour tortillas

Cheese ( shredded )

Oversized baking pan

Preheat oven at 350 degrees

Make a large pot of your favorite kind of thick chili.  When it is finished cooking set on Simmer and add the 2 cups of Hot Water.  Do not stir.  Allow the Chili juice to bubble up into the water.  Take one tortilla at a time and quickly dip the tortilla into the "chili water" in the top of the chili pot.  Lay Tortilla in baking dish, fill Tortilla with chili and cheese and roll torilla and place in dish.  Continue until you have completely packed the baking dish.  Take remaining chili and poor over the top of the rolled tortillas and put a thick layer of cheese on top of the chili.  Pan will be heavy so be prepared.  Place in preheated oven for 10 minutes.  Take out and serve.  Enjoy!!!!

 

HAMBURGER HASH

1 lb Hamburger Raw     3 potatoes diced

1 small onion or onion powder     Season to Taste

Crumble raw hamburger into skillet.  Season and scatter diced potatoes and onions on top of hamburger.  Put lid on skillet and simmer until meat is completely cooked and  potatoes are soft.  Drain grease.  Can be served as a Main dish or by itself.  **Also very good when you add your own veggies such as corn, peas or green beans and top with cheese.**    Our favorite way to eat this is rolled up in a warm tortilla.

 





Pasta


Super Easy Spaghetti Bake

1/2 lb of hamburger     1 egg beaten

1/2 c. butter melted and cooled

30 oz jar Spaghetti sauce (whatever flavor you like the best)

14 oz cooked spaghetti

1 pkg mozarella cheese

Brown ground beef (drain), mix the egg, butter, sauce and hamburger together.  In a 9x13 pan spaghetti then sauce and repeat.  Put cheese on top.  Coer with foil and bake at 350 degrees for 45 minutes.

Cherries in the Snow

1 graham cracker crust      6 oz cream cheese softened

1/2 cup sugar                    1t vanilla

1 cup cool whip or whipped cream  1 cup miniature marshmallows

1 can cherry pie filling

Blend the cream cheese, sugar and vanilla in a bowl.  Fold in the whipped cream and marshmallows.  Spoon into graham crust.  Chill for several hours to overrnight.  Spread the pie filling over the top.  Store in Frig





Veggies


Crock Pot Corn

2 16 oz packages of frozen corn( it is very importent to follow this recipe to the T )

1 8 oz package cream cheese      1 stick oleo       2T sugar

2 T water

Place corn in a regular size crockpot.  Cut cream cheese and Oleo into small cubes.  Add cheese, oleo, sugar and water to corn.  Cook on high for 45 minutes. Stir corn with wooden sppon.  Turn to low and cook 3 more hours.  Stir occasionally.  **FOr a 4 quart crock pot I triple the recipe**  This recipe is a HUGE hit at family gatherings :)





Substitutes


Allspice Substitute - mix 1/2 teaspoon each of cinnamon, cloves, nutmeg  This will equal 1 1/2 teaspoons all spice

Cake Flour - Blend 2 Tablespoons cornstarch into 2 cups all purpose flour

Croutons - Don't toss out those left over hotdog and hamburger buns.  Cut them into cubes, sprinkle with olive oil, garlic and salt.  Toast them in the oven until lightly browned.

After baking the Ham- use the excess juice and pour into ice cube trays.  Freeze them then place the cubes in a ziplock bag and place back into freezer.  When your ready to flavor your veggies, gravies or soups just add as many cubes as you wish.
